Sweet Potato Brownie



1 large zucchini grated

1 large sweet potato grated

1 cup of rice flour

1 cup ground rolled oats

¼ cup vegetable milk

2 tbsp ground linseeds

2 tsp cinnamon

Cocoa to taste (3-5 tbsp)

Rice syrup to taste  (2-4 tbsp)

Chopped walnuts

Pinch of salt



Heat the oven to  180 ºC.

1. Mix the dry ingredients in a bowl: rice flour, ground oat flakes, ground linseeds, cinnamon, cocoa, walnuts and a pinch of salt.

2. Mix the grated vegetables in another bowl.

3. Combine the dry ingredients with the vegetables, add rice syrup to taste and blend.

4. Place the mixture in a mold and bake at 180 ºC for approximately 30 minutes

The center will still be a little damp, but you will see that the outer part is ready.


Cooking notes

The beauty of this brownie is that we are using the natural sweetness of sweet potato and not using any sugar, but instead rice syrup. It is also gluten and dairy free and it does not need oil. The vegetables give that texture that brownies normally have. 

You will be really surprised with the result... worthwhile trying it out!
