Oat Cakes with seeds

INGREDIENTS
 

For sweet version:

-2 cups of rolled oats

-1, 3/4  cups of rice milk (or any other vegetable milk)

-2 tbsp raisins

-1 teaspoon ground cinnamon

-2 tablespoons (tbsp) of toasted pumpkin seeds

-2 tbps of toasted sunflower seeds
- sesame seeds

-1 tbsp of rice molasses

-2 tbsp

-1 pinch of salt

For savoury version:

-2 cups of rolled oats

-1, 3/4

 cups of rice milk (or any other vegetable milk)

-2 tablespoons (tbsp) of toasted pumpkin seeds

-2 tbps of toasted sunflower seeds
-sesame seeds

-chopped fresh rosemary

-finely chopped sundried tomatoes

-1 pinch of salt

PREPARATION

1. Soak the oat flakes with the vegetable drink for at least 1 hour.

2. Meanwhile toast the seeds.

3. After this time, add the rest of the ingredients to the soaked oat flakes.

4. In a baking dish place a baking paper on the base and distribute our mixture evenly.

You can put some sesame seeds on top.

5. Bake at 170º for 30 minutes, with the oven previously heated. The baking time may vary depending on the oven, so after this time, check that it is done.

Remove from the oven, let it cool and cut in your preferred way.

Nutritional & Energetic Notes

​

These cakes are a wonderful alternative to bread. The good thing is that we are not using flour, or oil or yeast. This makes them much more healthy than any product where we are using flour.

​

I have suggested the sweet and savoury option but as you can imagine there are many possibilities! You may use dried cranberries, almonds, walnuts... Or you may use other herbs, lemon zest, capers... Or you can make them as simple as you want and use them to spread some delicious vegetable paté (of Broccoli, Tofu & Sea Vegetables...) or Hummus.

As an alternative you can use buckwheat flakes or barley flakes or a combination of flakes. If you want a gluten free version then you can make them with buckwheat flakes. If you are using the bigger type of oat flakes, the cake will be a bit harder. You may like it that way or you can blend with the mixer the flakes after soaking and before adding the rest of the ingredients.
